Crockpot Salsa Chicken
4-6 frozen chicken breast
1 can of black beans
3/4 large jar of salsa (any brand, mild, medium, or hot)
1 block of cream cheese
Spray crockpot with Pam cooking spray. Lay frozen (or thawed) chicken breast in bottom of crockpot. Top with black beans. (Can add a can of drained corn if wanted!) Pour salsa on top. Cook for 6-7 1/2 hours on low (or 4 hours on high). Stir mixture. Add 1 block of cream cheese and cook on low for another 30 minutes. Stir together and serve.
We are going to serve with brown rice (90 minute microwavable type!), broccoli (nuked in microwave) and a salad.
