Rough Week, Snow and Remainder of Recipes

Well this week proved to be a very "rough" week at work.  I really try to leave work stuff at work - the problem is that this week I rarely got home before 6:30pm!  Ugh!  Hopefully next week will be better! 

We did get some major SNOW beginning on Friday afternoon - don't know what the exact amount is - news says 6+ inches!  Didn't get out in it....it will be another year or so before Trinity gets excited about it.  However our other baby (Nikki - the dog) LOVED, LOVED, LOVED it!  I'll try to post some pictures soon!  She stayed outside more than she did in.  Her paw prints are all over the front yard!

We ended up not having spaghetti/meatballs on Wednesday night - I got home at 7pm so we just heated up some frozen pizza and salad.  We did have Sweet n' Sour Chicken in the crockpot with rice (recipe below) on Thursday, leftovers on Friday, and then I made Taco Soup on Saturday.  Today we are going to do more leftovers!  Going to work on next weeks plan later tonight...........Enjoy!

Crockpot Sweet n' Sour Chicken


4-6 boneless, skinless chicken breast, cut into bite size pieces
5 oz sweet n sour sauce
1/4 tsp garlic powder
1/4 tsp onion powder
8 oz pineapple chuncks in their own juice, drain, reserve 1/4 cup
1 Tablespoon brown sugar
bag of frzen veggies your choice

Spray crockpot with cooking spray. Add chicken, garlic powder, and onion powder to crockpot. Stir sauce, pineapple chunks, brown sugar, and reserved juice into chicken mixture in crockpot. Cover and cook for 6-7 hours on low. Add vegetables and cook for 30 more minutes on high.
