I'm definitely a carb addict too. I've been trying to incorporate more nutritious ingredients into my regular recipes. I like the bread recipe especially because it is not too heavy on the wheat taste, has the crunch and extra nutritional benefit of millet, and it is partially sweetened by the honey instead of a ton of sugar. I plan to start experimenting with some other natural sweeteners soon, so that will make it even healthier :)
